Story - Minako Sushi

Our story

Minako was founded in 2008 by Jashim Uddin (1967–2023), a visionary chef whose journey took him from Bangladesh to the heart of Japan and, ultimately, to Stockholm. Born and raised in Bangladesh, Jashim had a deep curiosity for the sciences, particularly chemical engineering. When the time came to choose a path for his studies, two destinations stood before him: the United States or Japan. He chose Tokyo. 

With little money to his name, he took on extra work in bars to support himself. One day, his university professor suggested a different path—working in a restaurant. Not only would it provide him with financial stability, but it would also immerse him in the language and culture of Japan.

His professor, well-connected in Tokyo’s culinary world, introduced him to a highly respected chef. It was a bittersweet moment—losing a promising student, but opening the door to a new destiny. Jashim seized the opportunity. Over the next seven years, he trained rigorously, mastering the art of sushi and Japanese cuisine. 

When he finally returned to Bangladesh, it was only for a brief visit. Soon after, he set his sights on Stockholm—a place he would call home for the rest of his life. In October 2023, Jashim passed away, leaving behind not just a restaurant, but a legacy. Minako was his dream—a place where people outside Japan could experience true Japanese flavors, crafted with authenticity and passion.

Today, his daughter Katarina Uddin and their close friend Alexander Lorentz continue his vision, ensuring that Minako remains a testament to Jashim’s lifelong dedication to Japanese cuisine.
